Baked Flounder with Vegetables



This savory baked flounder dish is a great way to incorporate a variety of vegetables into a meal. Ingredients used:

For 4 people

  • 1 pound - Flounder fillets
  • 1 cup - Onions
  • 3 cups - Zucchini
  • 1 cup - Green peppers
  • 0.75 cup - Chopped tomatoes
  • 3 tablespoons - Dry sherry
  • 1 tablespoon - Lemon juice
  • 0.5 teaspoon - Salt
  • 0.5 teaspoon - Ground basil
  • 0.25 teaspoon - Black pepper
  • 1 dash - Hot pepper sauce
  • 0.25 cup - Grated Parmesan cheese

Recipe steps:

  • Cut the flounder fillets into serving sized pieces.
  • Place the flounder fillets in a greased 9-inch baking dish.
  • Saute the onions, zucchini and green peppers until crisp-tender, then spoon over the fillets.
  • Top with tomatoes.
  • In a small bowl, combine the sherry, lemon juice, salt, basil, pepper and pepper sauce then pour over the fillets.
  • Bake the dish in a preheated 350-degree oven for 25-30 minutes.
  • Remove the vegetables and fish to a heated platter. Sprinkle with parmesan cheese.
  • Serve over rice and pour any pan juices over the fish and vegetables as desired.
