Delicious Brown Rice Biscotti



This Brown Rice Biscotti is a wonderful accompaniment for roast poultry or pork. It’s made with unbleached flour, whole wheat flour, brown rice flour, sugar, baking powder, honey or brown rice syrup, egg whites, vanilla extract, dried apricots, and finely ground pecans. It’s easy to make and has a great flavor. Enjoy this delicious biscotti with your favorite roast meat or poultry dish.

Ingredients used:

For 1 people

  • 1 cup - Unbleached flour
  • 0.5 cup - Whole wheat flour
  • 0.5 cup - Brown rice flour
  • 0.25 cup - Sugar
  • 2 teaspoons - Baking powder
  • 0.25 cup - Honey or brown rice syrup
  • 3 - Egg whites
  • 1 teaspoon - Vanilla extract
  • 0.33 cup - Finely chopped dried apricots
  • 2 tablespoons - Finely ground pecans

Recipe steps:

  • In a bowl, combine the flours, sugar, and baking powder.
  • Add the remaining ingredients, stirring just until the dough holds together.
  • Shape the dough into two 9X2-inch logs and place them on a baking sheet.
  • Bake at 350F for 18 to 20 minutes or until lightly browned.
  • Allow the logs to cool for 10 minutes.
  • Cut the logs into 1/2-inch-thick slices and place them on a baking sheet.
  • Bake the slices at 350F for 18 to 20 minutes, turning over after 10 minutes.
  • Transfer the biscotti to cool on wire racks.
