Oh, my! I had the most scrumptious meat loaf for dinner. This is *definitely* a keeper. It combines all the wonderfulness of comfort food, lowfat and ease of preparation. I made a couple of changes because I didn’t have precisely the ingredients called for; they’re in the Notes section. Man, this was FINE stuff!! These oat bran muffins have all the deliciousness of comfort food in a low-fat package that can be prepared with ease. With the added nutrition of raisins, canned peaches, skim milk and egg whites, these muffins are sure to become a staple in your kitchen!
Ingredients used:
For 12 people
- 2 cups - Oat bran
- 0.25 cup - Oatmeal
- 1 tablespoon - Baking powder
- 0.25 cup - Raisins
- 0.125 cup - Brown sugar
- 1.25 cups - Skim milk
- 2 tablespoons - Rapeseed oil
- 14 ounces - Canned peaches in syrup
- 2 - Egg whites
Recipe steps:
- Defrost the frozen egg whites and set your oven to 200°C.
- Prepare 12 paper muffin cups in a muffin tray.
- In a large bowl, mix together the oat bran, oatmeal, baking powder, raisins, and brown sugar.
- Strain the juice from the canned peaches and reserve. Then make up a total of a little over 1 1/4 cups of the juice topped up with skim milk and pour into a jug.
- Stir the oil into the peach juice and milk mix.
- Mash the drained peaches in a food mixer and stir into the oil, milk and juice mix.
- Add the liquid mix to the dry mix and stir quickly and well.
- Lightly beat the egg whites and stir quickly into the mixture.
- Using a 1/4 cup measure, spoon the mixture into the muffin tray cups. Place in oven and close the door.
- Bake for 12 minutes or until a knife blade comes out clean. Take them out straight away, even if they haven't browned on top, otherwise muffins will be dry.
