Whether it’s fava, black-eye, or other type of shell beans, you can have this delicious side dish ready to serve in no time.

Ingredients used:

For 1 people

  • 1 pound of shell beans
  • 0.66 cup of defatted chicken broth -- or water
  • 1 of bay leaf

Recipe steps:

  • Toss the shell beans into a deep-sided dish with 0.66 cups (160 ml) of chicken stock and a bay leaf.
  • Cover and microwave on full power for 5 to 7 minutes, or until the beans are tender, stirring or shaking every 2 minutes.
  • Let the beans stand for about 5 minutes, drain, remove bay leaf and serve.

Once you’re done cooking your shell beans, you can serve them as is, or you can add some flavorings for a unique twist. Consider adding rice vinegar, a splash of peanut oil, and minced shallots and mint for a refreshing, Asian-inspired side dish. Or, you can add chopped plum tomatoes, minced green chili peppers, minced garlic, oregano, and a splash of olive oil for a Mediterranean flavor. No matter which flavor you choose, you’ll have a great side dish ready to serve in no time.
