- 2 cups - Grated Parmesan cheese
- 1 cup - Low-fat ricotta cheese
- 1 cup - Low-fat mozzarella cheese
- 1 bag - Frozen spinach, thawed and drained
- 1 cup - Dried green lentils
- 1 tablespoon - Olive oil
- 1 onion - Diced
- 2 cloves - Garlic, minced
- 2 cups - No-salt-added tomato sauce
- 1 teaspoon - Dried oregano
- 1 teaspoon - Dried basil
- 3 cups - Cooked lasagna noodles
- Preheat oven to 375 degrees Fahrenheit.
- Bring a medium saucepan of water to a boil. Rinse the lentils, add to the boiling water, and reduce the heat to low. Simmer for about 20 minutes, until the lentils are tender.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and cook for about 5 minutes, until the onion is softened.
- Add the tomato sauce and seasonings, and cook for about 10 minutes.
- In a medium bowl, mix together the ricotta cheese, mozzarella cheese, Parmesan cheese, and spinach. Add the cooked lentils and stir to combine.
- Spread 1/2 cup of the tomato sauce in the bottom of an 8x8-inch baking dish. Layer 1/3 of the lasagna noodles over the sauce. Top with 1/3 of the ricotta-cheese mixture, 1/2 cup of the tomato sauce, and another 1/3 of the lasagna noodles. Repeat this layering with the remaining ingredients, ending with the tomato sauce.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Uncover the baking dish and continue baking for another 10 minutes, until the cheese is melted and bubbly.
