  • 1 pizza stone - Unglazed ceramic tiles
  • 500 degree - Preheat oven
  • 3 times - Spray oven with water
  • 450 degree - Turn heat down
  • 1 cup - Dough

Recipe steps:

  • Preheat the oven to 500 degrees for at least a half hour. Place the bread directly on the unglazed ceramic tiles and transfer it with a pizza peel.
  • Spray the oven with water 2 or 3 times during the first five minutes. After 5 minutes, reduce the heat to 450 degrees and don't open the oven for 20 minutes.
  • Move the loaves around to get more even browning and bake for 15 or 20 minutes more. Check the internal temperature of the loaves with an instant read thermometer and ensure the temperature is between 210 and 220 degrees.
  • Retard the bread in the refrigerator overnight. After it is shaped, cover it with plastic wrap and let it rise in the fridge overnight. In the morning, take it out, let it finish rising and bake.
  • Save a cup of dough and use it the next time you make bread. You can keep it for 2 or 3 days in the refrigerator or freeze it if you aren't making bread that often. When you make your next dough, add the old dough about half way through the kneading.
