Saucy Apple Bread



This Saucy Apple Bread is a wonderful fall recipe from King Arthur Flour. It is full of flavour and is perfect for the season. It is a moist bread made with bread flour, whole wheat flour, walnuts, apple cider, applesauce and granny smith apple. I made adjustments to the original recipe to reduce fat and sugar. The house smelled of the saffron while baking and the final product is definitely worth making.

Ingredients used:

For 1 people

  • 1/2 cup - Apple cider
  • 1 1/3 cups - Bread flour
  • 3/4 cup - Whole wheat flour
  • 1 tablespoon - Whole wheat flour
  • 1 teaspoon - Salt
  • 2 1/2 tablespoons - Plain yogurt
  • 2 1/2 tablespoons - Honey
  • 1/3 teaspoon - Vanilla
  • 2 1/2 tablespoons - Walnuts
  • 2 1/2 tablespoons - Egg
  • 1/3 cup - Applesauce
  • 1/3 cup - Granny Smith apple
  • 1 1/4 teaspoons - Yeast

Recipe steps:

  • In a large bowl, mix together the bread and whole wheat flours with the salt.
  • In a separate bowl, blend together the yogurt, honey, vanilla, walnuts, eggs, cider, applesauce and diced apple.
  • Combine the wet ingredients into the dry ingredients, and mix until smooth.
  • Sprinkle the yeast over the top of the dough, cover the bowl with plastic wrap, and let it rest for 15 minutes.
  • Once the dough has rested, knead it for 8-10 minutes, either by hand or by using a mixer with a dough hook attachment.
  • Place the dough in a greased bowl, turn it over so that all sides are greased, and cover it with a damp cloth.
  • Allow the dough to rise until it is doubled in size, usually about 1-2 hours.
  • When the dough has risen, shape it into a loaf pan and bake at 375°F for about 25 minutes.
  • Let the bread cool on a wire rack for 30 minutes before serving.
