Healthy Okra, Chicken & Crab Gumbo with Rice

Ingredients used:

For 2 people

  • 1/2 cup cup - Onion
  • 1/4 cup cup - Scallion
  • 1/4 cup cup - Green bell pepper
  • 1/4 cup cup - Celery
  • 1/4 cup cup - Okra
  • 1 - Garlic clove
  • 1 teaspoon teaspoon - Fresh parsley
  • 2 tablespoons tablespoons - Dry brown roux
  • 2 cups cups - Water
  • 1 - Bay leaf
  • 1/4 teaspoon teaspoon - Thyme
  • 1/4 teaspoon teaspoon - Black pepper
  • 1 pinch - Cayenne
  • 3 ounces ounces - Crab
  • 4 ounces ounces - Cooked lean chicken meat
  • 1 cup cup - Hot cooked rice

Recipe steps:

  • In a saucepan, cook the onion, scallion, bell pepper, celery, okra, garlic, and parsley while stirring for 5 minutes.
  • Stir in the dry roux and slowly blend in the water.
  • Add the bay leaf, thyme, pepper, and cayenne and bring to a boil, then reduce to a simmer.
  • Add the crab and the chicken, cover the pot, and simmer for 30 minutes.
  • To serve, spoon the gumbo into warm soup bowls and top with 1/2 cup rice in the center of each. Enjoy immediately.
