Brazilian Plantains With Leafy Greens and Chicken

  • 1 tablespoon - Butter or margarine
  • 2 each - Medium-ripe plantains
  • 4 each - Boneless skinless chicken breast halves
  • 1 bunch - Mustard greens or spinach leaves only
  • 1 tablespoon - Butter or margarine
  • 1 cup - Chopped onion
  • 2 cloves - Chopped garlic
  • 4 each - Fresh tomatoes, chopped
  • 1/4 cup - Chicken broth
  • 1 teaspoon - Chili powder
  • 1/2 teaspoon - Salt
  • 1/4 teaspoon - Cumin
  • 1/4 teaspoon - Pepper

Recipe steps:

  • Use a knife to peel and slice the plantains 1/4 inch thick. Pound the chicken breasts to 1/4 inch thick.
  • Wash and remove the stems from the mustard greens or spinach leaves.
  • Prepare the spiced tomato sauce, then set aside and keep warm.
  • In a large skillet, melt butter or margarine over medium-high heat. Saute the plantain slices for 5 minutes, turning once.
  • Remove the plantains from the skillet, reserving the drippings in the pan. Quickly brown the chicken breasts on both sides, turning once.
  • Add the mustard greens and plantains to the skillet, cover. Cook for 3 to 5 minutes more or until wilted.
  • Serve the chicken and vegetables with the spiced tomato sauce.
